Chicken - Thighs & drumsticks ideal for barbecuing.

Lemon Sole, Flounder & Brill - The only white fish worth eating this month.

Shellfish - Unbeatable in June & includes, crab, shrimps, lobster & langoustines.

Salmon - At their best.  Poach slowly in 1 pint of white wine, 1 pint of water, 1 tbsp white wine vinegar, chopped onion, carrot, leek, herbs & seasoning.

Herring - Very tasty in July.

Sea Bass & Sea Braem - Very tasty during August.

Sardines - Ideal for a barbecue.

Lobster - Still at peak condition in July.

Grey Mullet - New season beginning in July, great for the grill.

Crab - Coming to the end of season in July.
