Turkey - It would not be Christmas without turkey.

Beef - At a premium this time of year, choose stewing steak as it is more tender than braising cuts. 

Venison - Casserole with shallots, mushrooms & root vegetables, making the sauce with a robust red wine.

Grouse - Try before the end of the grouse season ends on the 10th December.

Goose - Buy a large bird as most of the weight tends to be fat.  February marks the end of the feathered game season.

Partridge - The two month season is almost coming to a close in December.

Pheasant - Roast like a chicken.  February marks the end of the feathered game season.

Pigeon - Casserole in a rich wine sauce, allow one pigeon per person.  February marks the end of the feathered game season.

Rabbit & Hare - Season coming to a close in February.

Pork & Lamb - Tends not to be too expensive during from February.

Whelks, Cockles & Winkles - Eat with a dose of vinegar & pepper.

Haddock, Cod & Halibut - Price is low this time of year.
 
Dover Sole or Plaice -Ideal for grilling with a little butter.

Huss (Rock Salmon) - Makes a nice stew.

Salmon - Very expensive during February.
